The currently released Live2D Cubism SDK is not guaranteed to work with macOS Ventura.
Please refrain from upgrading the macOS as they may not work properly.
The Cubism Editor license file may be lost after the macOS upgrade.
Please make sure to deactivate the Cubism Editor license before upgrading the macOS.

I'm just starting out and I'm using my own drawing to get the hang of things and I'm follow a tutorial on to get started and when I got to adding a mesh the 'Add' button is grayed out for me along with the buttons next to it. I'm currently on the Trial Version, can someone please explain to me what is going on?

The add button is meant to add a new mesh generation preset. Not so much to add a new mesh.
If you are trying to redo the mesh you already created for the hair, you need to select one of the preexisting presets from the drop down menu again (light, standard, or heavy).
Might I suggest to also separate each hair strand/piece to about 7 different parts.
